This is an incredible rum, its just too bad for most of we can`t buy it. I was lucky enough to taste it at Tales of the Cocktail and i would summarize it as a rum with many and deep flavors and a very long finish. Would LOVE me a bottle!

Have anyone tried old rums? like from the 30s to the 50s? i just made a Mai Tai with JWray&Nephews old Dagger rum, thats Jamaican dark rum. I can believe that. i dont think that thing will be a trend either. What is a trend which i think will also stay is classic /vintage cocktails and fresh unspoiled ingrediets in both old and new cocktails.

The XM10 is very yummy,full bodied, round, with lots of toffee-like flavor. The XM12 Millenium lacks much of that toffee-like flavor and is less sweet, a bit lighter. Samaroli Port Morant 1990 is very very good, Old Vatted is quite good although very woody, Port Royal 1991 is good, Silver Seal rums are exceptional and so is Banks XM10, but i do have a bit of a sweet tooth..

I haven`t tried Coruba 25 yet, but i can recommend Coruba 12 which is a very fine rum and good for both mixing and sipping.

I dont know how on earth i missed this post!
But i can certainly attest that the 15 year Silver Seal is one of the best rums i ever had.
It was so good that i couldnt stop making Mai Tais with it, until the bottle was finished 2 weeks later.

Chili is really nice with mint and as garnish very striking but as you said, a little goes a long way inside of the drink itself.

The orange flower extract in oil is not the same thing! so be VERY careful with the 0.5 drop here..or if a t all..i would use it my bath instead.

I have now tasted it neat and my first thought actually was that this rum is best for mixing, but not with orange juice, maybe fresh lime, simple syrup and soda? i will play a little with it in the coming weekend.

You can never go wrong with Havana Club Blanco in a Mojito! ot the 3 anos which i like a lot as well. Another nice recipe that i have picked up from the MOR, http://www.ministryofrum.com/forums/showthread.php?t=1638 and Hank is to make coconut water icecubes and also add Coconut water in your Mojito...

Aged rum straight up or JW&N overprrof with Ting or decent Tiki drinks made with heavy demerara rums..that`s it! and of course..a killer Mai Tai with Silver Seal 15 year old Demerara rum! hmm..and then Banks on the rocks..mm..

I have lately been very fond of the 3 anos..i don`t know why, i just like it..and sometimes i use half of that with half of the blanco.

Count, the Havana Club Añejo Blanco (or the 3 years) is the rums to use for a Mojito rather than plantation Jamaica..in my opinion..

Certainly, cacao is not as forgiving as the vanilla bean in such matters... I wouldn`t try to infuse such a nice rum as Zaya..if you still want to try i would recommend that you make a very small batch..and let it sit just over night first and then taste frequently if you decide to leave it in for ...

Thanks for the recipe, it looks tasty! now i have 3 Pisco drinks to try as soon as i get my hands on a bottle of Pisco! Fortunately now i can get it here, makes things so much easier..
