July Rum of the Month - El Dorado 12 Year Old

El Dorado 12 Year OldEl Dorado Rum is produced in Guyana in the county of Demerara and is often referred to as the Liquid Gold of Guyana.

 

The rums from this region are known for their rich characteristics and are perhaps just as rich as the diverse nature and cultures of Guyana, the Land of Many Waters.

 

Here the conditions are perfect for growing sugar cane as well as the distillation and maturation processes.

 

The Sugar cane is grown along the banks of Demerara River and is harvested twice a year after the fields have been cleansed by fire.

 

By crushing the cane the juice is extracted and boiled to produce molasses that in turn is fermented and converted to alcohol.

 

At Demerara Distillers the fermentation of the molasses takes up to 26 hours and the resulting 'wash' contains around 6-8% abv.

 

Demerara Distillers own a large number of stills including the last remaining Wooden Coffey Still and two original Wooden Pot Stills.

  • 1 Double Retort Wooden Pot Still
  • 1 Small Batch Gin Pot Still

 

Using these stills Demerara Distillers are capable of producing more than 9 distinctly different styles of rum.

 

El Dorado rums are aged in 180 litre once used whisky barrels in a warehouse with a capacity to store around 80 000 barrels of rum. One could say this is a rum haven! Just imagine the combined angels share.

 

After ageing the rums are carefully blended to ensure consistency and the blend is often a combination of rums from different stills.

 

For El Dorado 12 Year Old a combination of rums from the Diamond Coffey still, the Enmore Wooden Coffey still and the Port Mourant Double Wooden Pot Still are used.

 

After blending the rums are reduced to bottling strength and bottled on site at the bottling plant.

 

DDL produces approximately 300 000 tons of sugar cane and 18 million litres of rum annually.
